Pancit Palabok is a Filipino noodle dish that is made with thin rice noodles, shrimp sauce, shrimp, boiled eggs, pork cracklings, and various toppings. Here is a recipe to make it:
Ingredients:
- 1 lb thin rice noodles (bihon)
- 1/2 lb shrimp, peeled and deveined
- 2 cups water
- 1/2 cup cornstarch
- 1/2 cup annatto seeds
- 1/2 cup cooking oil
- 1/2 cup chopped onions
- 1/4 cup chopped garlic
- 1/2 cup shrimp sauce (bagoong)
- 1 cup pork cracklings (chicharon), crushed
- 2 boiled eggs, sliced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions:
- Soak the rice noodles in water for 30 minutes, then drain and set aside.
- Boil the shrimp in 2 cups of water for 3-5 minutes until cooked, then set aside.
- In a separate bowl, mix the cornstarch with 2 cups of water and set aside.
- In a saucepan, heat the oil over medium heat, then add the onions and garlic and sauté until fragrant.
- Add the annatto seeds and stir for 1-2 minutes until the oil turns orange.
- Remove the seeds and add the shrimp sauce to the saucepan, then mix well.
- Add the cornstarch mixture to the saucepan and stir continuously until the sauce thickens.
- Add the cooked shrimp to the sauce and stir until coated.
- Place the rice noodles on a large serving plate, then pour the sauce on top.
- Garnish with crushed pork cracklings, sliced boiled eggs, green onions, cilantro, and lime wedges.
- Serve hot and enjoy!
