Here's a simple recipe for pork adobo:
Ingredients:
- 2 lbs. pork belly or pork shoulder, cut into cubes
- 1/2 cup white vinegar
- 1/2 cup soy sauce
- 1 cup water
- 1 head garlic, minced
- 2 bay leaves
- 1 tsp. whole black peppercorns
- 2 tbsp. cooking oil
- Salt to taste
Instructions:
In a large pot or Dutch oven, heat the cooking oil over medium-high heat. Add the pork and cook until lightly browned, about 5-7 minutes.
Add the minced garlic and cook for another 2 minutes, or until fragrant.
Add the soy sauce, vinegar, water, bay leaves, and whole black peppercorns. Bring the mixture to a boil.
Once the mixture comes to a boil, reduce the heat to low and cover the pot. Simmer for about 1 to 1 1/2 hours or until the pork is tender.
Once the pork is tender, uncover the pot and let the sauce thicken for another 10-15 minutes.
Taste the sauce and add salt, if needed.
Serve hot with steamed rice.
