Pork Adobo

 Here's a simple recipe for pork adobo:

Ingredients:

  • 2 lbs. pork belly or pork shoulder, cut into cubes
  • 1/2 cup white vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 head garlic, minced
  • 2 bay leaves
  • 1 tsp. whole black peppercorns
  • 2 tbsp. cooking oil
  • Salt to taste

Instructions:

  1. In a large pot or Dutch oven, heat the cooking oil over medium-high heat. Add the pork and cook until lightly browned, about 5-7 minutes.

  2. Add the minced garlic and cook for another 2 minutes, or until fragrant.

  3. Add the soy sauce, vinegar, water, bay leaves, and whole black peppercorns. Bring the mixture to a boil.

  4. Once the mixture comes to a boil, reduce the heat to low and cover the pot. Simmer for about 1 to 1 1/2 hours or until the pork is tender.

  5. Once the pork is tender, uncover the pot and let the sauce thicken for another 10-15 minutes.

  6. Taste the sauce and add salt, if needed.

  7. Serve hot with steamed rice.
