Pork menudo

Pork menudo is a popular Filipino dish that typically consists of pork, diced potatoes, carrots, and bell peppers cooked in a tomato-based sauce with spices and seasonings. Here's a recipe to make pork menudo:

Ingredients:

  • 1 lb pork shoulder, diced
  • 1 large potato, diced
  • 1 large carrot, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup water
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tbsp cooking oil
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions:

  1. In a pan, heat the cooking oil over medium-high heat. Add the diced pork and cook until browned on all sides. Remove the pork from the pan and set aside.
  2. In the same pan, sauté the garlic and onions until fragrant.
  3. Add the tomato sauce, water, soy sauce, vinegar, and sugar to the pan. Bring the mixture to a boil, then lower the heat and simmer for 10 minutes.
  4. Add the cooked pork, diced potatoes, carrots, and bell peppers to the pan. Season with salt and pepper to taste. Cover the pan and simmer for 20-25 minutes or until the vegetables are tender.
  5. Serve the pork menudo hot with steamed rice.
