Ingredients:
- 1 lb pork shoulder, diced
- 1 large potato, diced
- 1 large carrot, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1/2 cup water
- 2 tbsp soy sauce
- 2 tbsp vinegar
- 2 tbsp cooking oil
- 1 tsp sugar
- Salt and pepper to taste
Instructions:
- In a pan, heat the cooking oil over medium-high heat. Add the diced pork and cook until browned on all sides. Remove the pork from the pan and set aside.
- In the same pan, sauté the garlic and onions until fragrant.
- Add the tomato sauce, water, soy sauce, vinegar, and sugar to the pan. Bring the mixture to a boil, then lower the heat and simmer for 10 minutes.
- Add the cooked pork, diced potatoes, carrots, and bell peppers to the pan. Season with salt and pepper to taste. Cover the pan and simmer for 20-25 minutes or until the vegetables are tender.
- Serve the pork menudo hot with steamed rice.
