Adobong Isda is a popular Filipino dish made with fish cooked in a mixture of vinegar, soy sauce, garlic, and other seasonings. Here is a recipe to make Adobong Isda:
Ingredients:
- 1 lb of fish (tilapia, bangus, or any other white fish)
- 1/2 cup of vinegar
- 1/2 cup of soy sauce
- 1/2 cup of water
- 1 tbsp of brown sugar
- 1 head of garlic, minced
- 1 onion, sliced
- 2 bay leaves
- 1 tsp of whole peppercorns
- 2 tbsp of cooking oil
Instructions:
- Clean the fish, remove the scales and guts, and cut into serving pieces.
- In a large bowl, mix the vinegar, soy sauce, water, brown sugar, garlic, onion, bay leaves, and peppercorns.
- Add the fish pieces to the marinade and mix well. Marinate the fish for at least 30 minutes, or preferably overnight, in the refrigerator.
- In a pan, heat the oil over medium heat. Remove the fish from the marinade and reserve the marinade for later.
- Fry the fish until both sides are lightly browned. Set aside.
- In the same pan, sauté the remaining garlic and onions until they are soft and fragrant.
- Add the reserved marinade to the pan and bring it to a boil.
- Reduce the heat and add the fried fish pieces. Simmer for 10-15 minutes, or until the sauce thickens and the fish is cooked through.
Serve hot with steamed rice. Enjoy your Adobong Isda!
