Here's a recipe for Escabeche Pinoy-style, a popular Filipino dish that features a sweet and sour sauce.
Ingredients:
- 1 whole fish (tilapia, lapu-lapu, or any firm-fleshed fish), cleaned and scored
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- 1 large onion, sliced
- 1 carrots, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup vinegar
- 1/4 cup water
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- Spring onions for garnish
Instructions:
- Season the fish with salt and pepper, and coat in flour.
- In a pan, heat the vegetable oil over medium-high heat. Fry the fish until golden brown, then set aside.
- In the same pan, sauté the onions and bell peppers until they are tender.
- Add vinegar, water, brown sugar, and soy sauce to the pan, and stir until the sugar has dissolved.
- Let the mixture simmer for a few minutes until the sauce has thickened.
- In a small bowl, mix cornstarch and water until it forms a paste. Add it to the pan and stir to thicken the sauce even more.
- Pour the sauce over the fried fish and garnish with spring onions.
