Tortang Talong is a popular Filipino dish that is made from eggplants (talong) and eggs. Here's a recipe to make it:
Ingredients:
- 4 medium-sized eggplants
- 4 eggs
- 1/2 cup of flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup cooking oil
Instructions:
- Preheat your oven to 350°F.
- Roast the eggplants over an open flame until they are cooked and their skins are charred. Once they are done, peel off the skin and flatten the eggplants using a fork or a spatula. Set aside.
- Beat the eggs in a bowl and add the flour, salt, and black pepper. Mix until everything is well combined.
- Heat a non-stick pan over medium heat and add the cooking oil.
- Dip each eggplant in the egg mixture and fry in the pan until golden brown on both sides.
- Transfer the eggplants to a baking sheet and bake in the oven for 10-15 minutes.
- Once done, serve hot with rice and your favorite dipping sauce.
