Tortang Talong

Tortang Talong is a popular Filipino dish that is made from eggplants (talong) and eggs. Here's a recipe to make it:

Ingredients:

  • 4 medium-sized eggplants
  • 4 eggs
  • 1/2 cup of flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup cooking oil

Instructions:

  1. Preheat your oven to 350°F.
  2. Roast the eggplants over an open flame until they are cooked and their skins are charred. Once they are done, peel off the skin and flatten the eggplants using a fork or a spatula. Set aside.
  3. Beat the eggs in a bowl and add the flour, salt, and black pepper. Mix until everything is well combined.
  4. Heat a non-stick pan over medium heat and add the cooking oil.
  5. Dip each eggplant in the egg mixture and fry in the pan until golden brown on both sides.
  6. Transfer the eggplants to a baking sheet and bake in the oven for 10-15 minutes.
  7. Once done, serve hot with rice and your favorite dipping sauce.
