Atchara

Atchara is a traditional Filipino condiment made from grated unripe papaya, carrots, onions, garlic, vinegar, sugar, and salt. Here's a recipe for making atchara Pinoy style:

Ingredients:

  • 1 unripe papaya, peeled and grated
  • 2 carrots, peeled and grated
  • 1 small red onion, peeled and sliced thinly
  • 3 cloves garlic, minced
  • 1/2 cup vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. In a large bowl, mix together the grated papaya, carrots, onion, and garlic. Set aside.
  2. In a saucepan, combine the vinegar, brown sugar, salt, and black pepper. Bring to a boil, stirring until the sugar and salt are dissolved.
  3. Pour the hot vinegar mixture over the papaya mixture and stir to combine.
  4. Let the atchara cool to room temperature before transferring it to a clean glass jar with a tight-fitting lid.
  5. Store the atchara in the refrigerator for at least a day before serving to allow the flavors to meld. Serve as a condiment for grilled or fried meats, fish, or rice dishes.
