Atchara is a traditional Filipino condiment made from grated unripe papaya, carrots, onions, garlic, vinegar, sugar, and salt. Here's a recipe for making atchara Pinoy style:
Ingredients:
- 1 unripe papaya, peeled and grated
- 2 carrots, peeled and grated
- 1 small red onion, peeled and sliced thinly
- 3 cloves garlic, minced
- 1/2 cup vinegar
- 1/2 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- In a large bowl, mix together the grated papaya, carrots, onion, and garlic. Set aside.
- In a saucepan, combine the vinegar, brown sugar, salt, and black pepper. Bring to a boil, stirring until the sugar and salt are dissolved.
- Pour the hot vinegar mixture over the papaya mixture and stir to combine.
- Let the atchara cool to room temperature before transferring it to a clean glass jar with a tight-fitting lid.
- Store the atchara in the refrigerator for at least a day before serving to allow the flavors to meld. Serve as a condiment for grilled or fried meats, fish, or rice dishes.
Enjoy your homemade atchara!
