Here is a simple recipe for ginisang upo:
Ingredients:
- 1 medium-sized upo, peeled and sliced into small pieces
- 1/4 kilogram ground pork or diced chicken (optional)
- 2 cloves garlic, minced
- 1 medium-sized onion, chopped
- 2 medium-sized tomatoes, chopped
- 1 tablespoon fish sauce or salt
- 1/2 teaspoon black pepper
- 1 cup water
- 2 tablespoons cooking oil
Instructions:
- Heat the cooking oil in a pan over medium heat.
- Sauté the garlic, onion, and tomatoes until the onions become translucent and the tomatoes are soft.
- Add the ground pork or diced chicken and cook until browned.
- Add the sliced upo and stir for a few minutes.
- Add the fish sauce or salt and black pepper, and stir again.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pan, and let it simmer until the upo is tender (about 10-15 minutes).
- Taste and adjust the seasoning as needed.
- Serve hot with rice.
