Ginisang Upo

Ginisang upo is a Filipino dish that is made with upo or bottle gourd, sautéed with garlic, onions, tomatoes, and a protein of your choice.

Here is a simple recipe for ginisang upo:

Ingredients:

  • 1 medium-sized upo, peeled and sliced into small pieces
  • 1/4 kilogram ground pork or diced chicken (optional)
  • 2 cloves garlic, minced
  • 1 medium-sized onion, chopped
  • 2 medium-sized tomatoes, chopped
  • 1 tablespoon fish sauce or salt
  • 1/2 teaspoon black pepper
  • 1 cup water
  • 2 tablespoons cooking oil

Instructions:

  1. Heat the cooking oil in a pan over medium heat.
  2. Sauté the garlic, onion, and tomatoes until the onions become translucent and the tomatoes are soft.
  3. Add the ground pork or diced chicken and cook until browned.
  4. Add the sliced upo and stir for a few minutes.
  5. Add the fish sauce or salt and black pepper, and stir again.
  6. Pour in the water and bring to a boil.
  7. Reduce the heat to low, cover the pan, and let it simmer until the upo is tender (about 10-15 minutes).
  8. Taste and adjust the seasoning as needed.
  9. Serve hot with rice.
