Ingredients:
- 2 packs (24g each) pandan-flavored gelatin powder
- 1 1/2 cups water
- 2 cups young coconut meat, shredded
- 1 can (14oz) condensed milk
- 1 can (12oz) evaporated milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1 cup cooked sago/tapioca pearls (optional)
- Ice cubes
Instructions:
- In a pot, boil the water and add the pandan-flavored gelatin powder. Stir until dissolved.
- Add the sugar and stir until dissolved. Remove from heat and let it cool down for a few minutes.
- Add the shredded young coconut meat and the cooked sago/tapioca pearls (if using) into the pot with the gelatin mixture. Mix well.
- Pour the condensed milk and evaporated milk into the mixture and stir until well combined.
- Add the heavy cream and mix well.
- Pour the mixture into a rectangular or square baking dish.
- Chill in the refrigerator until set, about 3-4 hours or overnight.
- Once set, cut the Buko Pandan into small cubes and serve chilled with ice cubes.
