Buko Pandan

Here's a recipe for Buko Pandan that serves 6-8 people:

Ingredients:

  • 2 packs (24g each) pandan-flavored gelatin powder
  • 1 1/2 cups water
  • 2 cups young coconut meat, shredded
  • 1 can (14oz) condensed milk
  • 1 can (12oz) evaporated milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 cup cooked sago/tapioca pearls (optional)
  • Ice cubes

Instructions:

  1. In a pot, boil the water and add the pandan-flavored gelatin powder. Stir until dissolved.
  2. Add the sugar and stir until dissolved. Remove from heat and let it cool down for a few minutes.
  3. Add the shredded young coconut meat and the cooked sago/tapioca pearls (if using) into the pot with the gelatin mixture. Mix well.
  4. Pour the condensed milk and evaporated milk into the mixture and stir until well combined.
  5. Add the heavy cream and mix well.
  6. Pour the mixture into a rectangular or square baking dish.
  7. Chill in the refrigerator until set, about 3-4 hours or overnight.
  8. Once set, cut the Buko Pandan into small cubes and serve chilled with ice cubes.
