Ingredients:

  • 2 medium-sized bitter melons (ampalaya), sliced and seeded
  • 2 eggs, beaten
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium-sized tomatoes, chopped
  • 1 tablespoon fish sauce (patis)
  • Salt and pepper, to taste
  • Cooking oil

Instructions:

  1. Heat some cooking oil in a pan over medium heat. Once the oil is hot, add the garlic and onion and sauté until the onion becomes translucent.
  2. Add the chopped tomatoes and sauté until they become soft and mushy.
  3. Add the sliced and seeded bitter melons and stir-fry for about 3-5 minutes or until they are slightly tender.
  4. Season with fish sauce, salt, and pepper, and continue to stir-fry for another 2-3 minutes.
  5. Pour the beaten eggs into the pan and mix them with the other ingredients until the eggs are fully cooked and scrambled.
  6. Serve hot with steamed rice.
