Ingredients:
- 2 medium-sized bitter melons (ampalaya), sliced and seeded
- 2 eggs, beaten
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium-sized tomatoes, chopped
- 1 tablespoon fish sauce (patis)
- Salt and pepper, to taste
- Cooking oil
Instructions:
- Heat some cooking oil in a pan over medium heat. Once the oil is hot, add the garlic and onion and sauté until the onion becomes translucent.
- Add the chopped tomatoes and sauté until they become soft and mushy.
- Add the sliced and seeded bitter melons and stir-fry for about 3-5 minutes or until they are slightly tender.
- Season with fish sauce, salt, and pepper, and continue to stir-fry for another 2-3 minutes.
- Pour the beaten eggs into the pan and mix them with the other ingredients until the eggs are fully cooked and scrambled.
