Ingredients:


  • 1 lb. pork belly, sliced into thin pieces
  • 2 cups coconut milk
  • 1/2 cup shrimp paste (bagoong)
  • 1 cup long green chili peppers, sliced
  • 1/2 cup red chili peppers, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste


Instructions:


  1. In a large pan, heat the oil over medium heat. Add the garlic, onion, and ginger and sauté until fragrant.
  2. Add the pork belly and cook until browned on all sides.
  3. Add the shrimp paste and stir until evenly distributed.
  4. Pour in the coconut milk and bring to a boil.
  5. Add the chili peppers and season with salt and pepper to taste.
  6. Lower the heat and let it simmer for 15-20 minutes, or until the pork is tender and the sauce has thickened.

Serve hot with steamed rice.
