Sisig Pork

Pork sisig is a popular Filipino dish made with parts of the pig's head, such as the cheeks and ears, which are boiled, grilled, chopped, and then mixed with onions, chili peppers, and other seasonings. It is often served on a sizzling plate and topped with an egg and calamansi (a type of citrus fruit) juice. Pork sisig is usually eaten as an appetizer or pulutan (snack) and is often paired with beer or other alcoholic drinks.

To make pork sisig, you will need the following ingredients:

  • 1 lb pork cheeks, ears, or other head meat
  • 1 onion, chopped
  • 3-4 chili peppers, chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp brown sugar
  • 1/4 cup chicken broth
  • 1 egg
  • Calamansi or lime wedges, for serving
  • Salt and pepper, to taste


Here are the steps to prepare pork sisig:

  1. Boil the pork head meat in water until it is tender. Drain and grill the meat until it is browned and slightly crispy. Chop the meat into small pieces and set aside.
  2. In a pan over medium heat, sauté the garlic and onions until the onions are translucent.
  3. Add the chopped chili peppers to the pan and sauté for another minute.
  4. Add the chopped pork to the pan and stir to combine with the onion and chili pepper mixture.
  5. Add the soy sauce, vinegar, brown sugar, and chicken broth to the pan and stir to combine. Cook for another 5-10 minutes, or until the liquid has evaporated and the pork is crispy.
  6. Crack an egg onto the top of the pork sisig and let it cook for a few minutes until it is set.
  7. Serve the pork sisig on a sizzling plate with calamansi or lime wedges on the side.
