Beef Kaldereta

Beef Kaldereta is a popular Filipino dish that is rich, hearty, and flavorful. It is a stew made with tender beef, potatoes, carrots, bell peppers, and green peas, simmered in a tomato-based sauce with a blend of spices and liver spread.

Here's a recipe for Beef Kaldereta:


Ingredients:


2 lbs. beef, cut into cubes

2 large potatoes, peeled and cubed

2 large carrots, peeled and cubed

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup green peas

1 onion, chopped

4 cloves garlic, minced

2 tbsp. cooking oil

1 can (14 oz.) diced tomatoes

1/2 cup tomato sauce

1/4 cup liver spread

1 cup beef broth

1 bay leaf

1 tsp. salt

1/2 tsp. black pepper

1 tsp. sugar

2 tbsp. soy sauce

1/4 cup grated cheese

Instructions:


In a large pot or Dutch oven, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.

Add the beef cubes and cook until browned on all sides.

Pour in the diced tomatoes, tomato sauce, beef broth, bay leaf, salt, black pepper, sugar, and soy sauce. Stir to combine.

Bring to a boil, then lower the heat to medium-low and simmer for 1 hour or until the beef is tender.

Add the potatoes, carrots, and bell peppers. Simmer for another 20-30 minutes or until the vegetables are cooked.

Add the liver spread and green peas. Stir to combine.

Sprinkle grated cheese on top of the kaldereta and let it melt.

Serve hot with steamed rice.
