Halo-halo is a popular Filipino dessert that literally means "mix-mix". It is a refreshing dessert that is perfect for hot and humid weather. Here's a simple recipe for you:
Ingredients:
- 2 cups shaved ice
- 1/2 cup evaporated milk
- 1/4 cup condensed milk
- 1/2 cup cooked sweet beans (munggo, garbanzos or kidney beans)
- 1/2 cup sweetened banana (saba)
- 1/2 cup cooked sweet potato, cubed
- 1/2 cup ripe jackfruit, cubed
- 1/2 cup cooked tapioca pearls
- 1/4 cup sugar
- Pinch of salt
- Ube Halaya or purple yam jam
- Leche flan or caramel custard, sliced
Instructions:
- Prepare all the ingredients by cooking and cubing the sweet potato, boiling the beans and tapioca pearls and slicing the banana and jackfruit.
- In a large mixing bowl, add the shaved ice, evaporated milk, condensed milk, sugar, and a pinch of salt. Mix well until the sugar has dissolved and the mixture is well combined.
- Add the sweet beans, sweet potato, banana, jackfruit, and tapioca pearls. Mix everything together until evenly distributed.
- Add a generous amount of ube halaya on top and slice the leche flan and add it on top as well.
Serve the halo-halo immediately and enjoy!
Note: You can adjust the sweetness of the halo-halo to your liking by adding more or less sugar and condensed milk. You can also add other ingredients such as nata de coco, macapuno, or sweet corn.
