Ingredients:


  • 1 lb chicken, cut into serving pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 potatoes, peeled and cubed
  • 1 carrot, peeled and sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp fish sauce
  • 1 tbsp calamansi juice
  • Salt and pepper to taste
  • Oil for sautéing

Instructions:

  1. Heat oil in a large pot or pan over medium heat. Add onions, garlic, and ginger and sauté until onions are translucent and the mixture is fragrant.

  2. Add the chicken and cook until browned on all sides.

  3. Add curry powder and cook for 1-2 minutes until fragrant.

  4. Add the potatoes, carrots, and bell peppers and stir to combine.

  5. Pour in the coconut milk and chicken broth. Bring to a boil then reduce heat to low and simmer until the chicken and vegetables are tender.

  6. Season with fish sauce, calamansi juice, salt, and pepper to taste.

  7. Serve hot with steamed rice or bread.
