Here's a recipe for crispy pata:

Ingredients:

  • 1 whole pork knuckle or pork hock (around 3-4 lbs)
  • 6 cups water
  • 2 tbsp salt
  • 2 bay leaves
  • 1 tsp peppercorns
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying

Dipping sauce:

  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1 small onion, finely chopped
  • 2-3 red chili peppers, chopped

Instructions:

  1. In a large pot, combine the pork knuckle, water, salt, bay leaves, peppercorns, and garlic. Bring to a boil over high heat. Reduce heat to medium-low and simmer for 2-3 hours or until the pork is tender.

  2. Remove the pork from the pot and let it cool. You can also refrigerate it for a few hours or overnight to make it easier to handle.

  3. In a bowl, mix together flour, baking powder, salt, and black pepper.

  4. Heat enough oil in a deep fryer or large pot to cover the pork knuckle. Preheat the oil to 375°F.

  5. Dip the pork knuckle in the flour mixture, making sure it is coated evenly.

  6. Carefully lower the pork knuckle into the hot oil and fry for about 10-15 minutes or until it is golden brown and crispy.

  7. Remove the pork knuckle from the oil and let it drain on paper towels.

  8. For the dipping sauce, mix together soy sauce, vinegar, chopped onions, and chopped chili peppers in a small bowl.

  9. Serve the crispy pata hot with the dipping sauce on the side.
