Pancit bihon is a Filipino dish made with rice noodles, meat, vegetables, and sometimes seafood. Here's a recipe to make pancit bihon:
Ingredients:
- 1 pound rice noodles (bihon)
- 2 tablespoons vegetable oil
- 1/2 pound pork, sliced into thin pieces
- 1/2 pound chicken breast, sliced into thin pieces
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup carrots, julienned
- 1 cup cabbage, sliced
- 1 cup green beans, sliced
- 3 cups chicken broth
- 2 tablespoons soy sauce
- Salt and pepper to taste
Instructions:
Soak the rice noodles in water for 15-20 minutes or until soft.
In a wok or large skillet, heat the oil over medium-high heat. Add the pork and chicken and stir-fry until browned.
Add the onion and garlic and stir-fry until fragrant.
Add the carrots, cabbage, and green beans, and stir-fry for 2-3 minutes.
Add the chicken broth and soy sauce, and bring to a boil.
Drain the rice noodles and add them to the wok. Stir-fry until the noodles are coated in the sauce.
Season with salt and pepper to taste.
Serve hot and enjoy!
