Pancit Bihon

Pancit bihon is a Filipino dish made with rice noodles, meat, vegetables, and sometimes seafood. Here's a recipe to make pancit bihon:

Ingredients:

  • 1 pound rice noodles (bihon)
  • 2 tablespoons vegetable oil
  • 1/2 pound pork, sliced into thin pieces
  • 1/2 pound chicken breast, sliced into thin pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup carrots, julienned
  • 1 cup cabbage, sliced
  • 1 cup green beans, sliced
  • 3 cups chicken broth
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions:

  1. Soak the rice noodles in water for 15-20 minutes or until soft.

  2. In a wok or large skillet, heat the oil over medium-high heat. Add the pork and chicken and stir-fry until browned.

  3. Add the onion and garlic and stir-fry until fragrant.

  4. Add the carrots, cabbage, and green beans, and stir-fry for 2-3 minutes.

  5. Add the chicken broth and soy sauce, and bring to a boil.

  6. Drain the rice noodles and add them to the wok. Stir-fry until the noodles are coated in the sauce.

  7. Season with salt and pepper to taste.

  8. Serve hot and enjoy!
