Lumpiang Sariwa

Lumpiang Sariwa, also known as Fresh Spring Rolls, is a Filipino dish that consists of vegetables and meat or shrimp wrapped in a soft and delicate crepe-like wrapper made from flour and egg. Here's a recipe for making Lumpiang Sariwa:

Ingredients:

For the wrapper:

  • 1 1/2 cups of all-purpose flour
  • 1 egg
  • 1 1/2 cups of water
  • 1/4 tsp of salt
  • 1 tbsp of vegetable oil


For the filling:

  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 1/4 kg of pork, sliced into thin strips (you can also use chicken, shrimp or tofu)
  • 1/4 kg of shrimp, peeled and deveined
  • 1/4 cup of fish sauce
  • 1/4 tsp of black pepper
  • 1 cup of water
  • 1 cup of jicama, sliced into thin strips
  • 1 cup of carrots, sliced into thin strips
  • 1 cup of cabbage, sliced into thin strips
  • 1/4 cup of green onions, chopped
  • 1/4 cup of cilantro, chopped
  • 1/4 cup of peanuts, chopped
  • 12-15 lettuce leaves
  • 1/2 cup of sweet sauce (recipe below)


For the sweet sauce:

  • 3/4 cup of brown sugar
  • 1/2 cup of water
  • 1/4 cup of soy sauce
  • 1 tbsp of cornstarch dissolved in 1/4 cup of water
  • 1/4 cup of peanut butter


Instructions:

  1. Make the wrapper: In a mixing bowl, combine all-purpose flour, egg, water, salt, and vegetable oil. Mix well until the batter becomes smooth. Heat a non-stick pan over medium heat. Using a ladle, pour the batter into the pan, spreading it into a thin layer. Cook for 1-2 minutes or until the edges of the wrapper start to curl up. Flip the wrapper and cook the other side for another 1-2 minutes. Transfer the wrapper onto a plate and repeat the process until all of the batter is used up.
  2. Make the sweet sauce: In a saucepan, combine brown sugar, water, and soy sauce. Bring to a boil and stir occasionally. Add the cornstarch mixture and stir until the sauce thickens. Remove from heat and stir in the peanut butter until it is fully incorporated.
  3. Make the filling: In a wok or frying pan, heat some oil over medium heat. Saute garlic and onion until fragrant. Add pork and shrimp, and cook until they are no longer pink. Season with fish sauce and black pepper. Add water and bring to a boil. Add jicama, carrots, and cabbage. Stir-fry for 2-3 minutes or until the vegetables are cooked but still crisp. Add green onions, cilantro, and peanuts. Stir-fry for another minute.
  4. Assemble the lumpia: Lay a lettuce leaf on top of a wrapper. Spoon some of the filling on top of the lettuce leaf. Fold the sides of the wrapper over the filling and roll the wrapper tightly. Repeat with the remaining wrappers and filling.
  5. Serve the lumpia with the sweet sauce on the side.
