Chicken Afritada

Chicken Afritada is a Filipino dish that is usually made with chicken cooked in a tomato-based sauce with vegetables like potatoes, carrots, and bell peppers. Here's a simple recipe you can try:

Ingredients:

  • 1 kg chicken, cut into serving pieces
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 2 potatoes, cubed
  • 1 carrot, cubed
  • 1 cup tomato sauce
  • 1 cup water
  • 2 tbsp cooking oil
  • Salt and pepper, to taste

Instructions:

  1. Heat the cooking oil in a pot or pan over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set it aside.
  2. In the same pot, sauté the garlic and onion until fragrant and translucent.
  3. Add the red bell pepper, potatoes, and carrot to the pot and stir until they are slightly softened.
  4. Pour in the tomato sauce and water and stir until well combined.
  5. Add the chicken back into the pot and stir to coat it with the sauce. Season with salt and pepper to taste.
  6. Bring the mixture to a boil then reduce the heat to low and let it simmer for 30-40 minutes or until the chicken is fully cooked and tender.
  7. Serve hot with rice.
