Ingredients:
- 1 kg chicken, cut into serving pieces
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, sliced
- 2 potatoes, cubed
- 1 carrot, cubed
- 1 cup tomato sauce
- 1 cup water
- 2 tbsp cooking oil
- Salt and pepper, to taste
Instructions:
- Heat the cooking oil in a pot or pan over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set it aside.
- In the same pot, sauté the garlic and onion until fragrant and translucent.
- Add the red bell pepper, potatoes, and carrot to the pot and stir until they are slightly softened.
- Pour in the tomato sauce and water and stir until well combined.
- Add the chicken back into the pot and stir to coat it with the sauce. Season with salt and pepper to taste.
- Bring the mixture to a boil then reduce the heat to low and let it simmer for 30-40 minutes or until the chicken is fully cooked and tender.
- Serve hot with rice.
