Sapin-sapin is a traditional Filipino dessert made from glutinous rice flour, coconut milk, sugar, and food coloring. It is a layered cake that is usually served during special occasions and celebrations.
Here's a recipe for sapin-sapin:
Ingredients:
- 2 cups glutinous rice flour
- 1 cup sugar
- 3 cups coconut milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup ube (purple yam) jam
- 1/2 cup macapuno (sweetened coconut) strips
- 1/4 cup cornstarch
- Food coloring (optional)
Instructions:
- In a large mixing bowl, combine the glutinous rice flour, sugar, coconut milk, vanilla extract, and salt. Mix well until the sugar is dissolved and the batter is smooth.
- Divide the batter into three equal portions.
- Add ube jam to one portion of the batter and mix well. Add purple food coloring, if desired.
- Add macapuno strips to another portion of the batter and mix well.
- Leave the remaining portion of the batter plain, or add yellow food coloring for a yellow layer.
- Grease an 8-inch round cake pan with oil or butter.
- Pour the plain batter into the pan and steam for 10-15 minutes, or until the layer is set.
- Pour the ube layer on top of the plain layer and steam for another 10-15 minutes.
- Pour the macapuno layer on top of the ube layer and steam for another 10-15 minutes.
- In a small bowl, mix the cornstarch with a little water to create a slurry.
- Pour the cornstarch slurry on top of the final layer and steam for another 5-10 minutes, or until the sapin-sapin is fully cooked and the top is shiny.
- Remove the sapin-sapin from the pan and let it cool.
- Slice the sapin-sapin into small pieces and serve.
