Sapin-sapin

Sapin-sapin is a traditional Filipino dessert made from glutinous rice flour, coconut milk, sugar, and food coloring. It is a layered cake that is usually served during special occasions and celebrations.

Here's a recipe for sapin-sapin:


Ingredients:

  • 2 cups glutinous rice flour
  • 1 cup sugar
  • 3 cups coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup ube (purple yam) jam
  • 1/2 cup macapuno (sweetened coconut) strips
  • 1/4 cup cornstarch
  • Food coloring (optional)

Instructions:

  1. In a large mixing bowl, combine the glutinous rice flour, sugar, coconut milk, vanilla extract, and salt. Mix well until the sugar is dissolved and the batter is smooth.
  2. Divide the batter into three equal portions.
  3. Add ube jam to one portion of the batter and mix well. Add purple food coloring, if desired.
  4. Add macapuno strips to another portion of the batter and mix well.
  5. Leave the remaining portion of the batter plain, or add yellow food coloring for a yellow layer.
  6. Grease an 8-inch round cake pan with oil or butter.
  7. Pour the plain batter into the pan and steam for 10-15 minutes, or until the layer is set.
  8. Pour the ube layer on top of the plain layer and steam for another 10-15 minutes.
  9. Pour the macapuno layer on top of the ube layer and steam for another 10-15 minutes.
  10. In a small bowl, mix the cornstarch with a little water to create a slurry.
  11. Pour the cornstarch slurry on top of the final layer and steam for another 5-10 minutes, or until the sapin-sapin is fully cooked and the top is shiny.
  12. Remove the sapin-sapin from the pan and let it cool.
  13. Slice the sapin-sapin into small pieces and serve.
