Laing sa Gata

 Laing, a traditional Filipino dish made with taro leaves and coconut milk:

Ingredients:

  • 2 cups dried taro leaves
  • 2 cups coconut milk
  • 1 cup water
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp ginger, minced
  • 1/2 lb pork belly, sliced into small pieces
  • 2 tbsp shrimp paste
  • 3-4 pcs red chili pepper (optional)
  • 2 tbsp cooking oil
  • salt and pepper to taste

Instructions:

  1. Rinse the taro leaves and remove the stems. Cut the leaves into thin strips and set aside.
  2. In a pot, heat the cooking oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  3. Add the pork belly and cook until browned.
  4. Add the shrimp paste and sauté for a few more minutes.
  5. Add the taro leaves, coconut milk, and water, and stir well.
  6. Add the red chili pepper (if using).
  7. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 30 minutes, stirring occasionally.
  8. Add salt and pepper to taste.
  9. Serve hot with steamed rice.
