Laing, a traditional Filipino dish made with taro leaves and coconut milk:
Ingredients:
- 2 cups dried taro leaves
- 2 cups coconut milk
- 1 cup water
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp ginger, minced
- 1/2 lb pork belly, sliced into small pieces
- 2 tbsp shrimp paste
- 3-4 pcs red chili pepper (optional)
- 2 tbsp cooking oil
- salt and pepper to taste
Instructions:
- Rinse the taro leaves and remove the stems. Cut the leaves into thin strips and set aside.
- In a pot, heat the cooking oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
- Add the pork belly and cook until browned.
- Add the shrimp paste and sauté for a few more minutes.
- Add the taro leaves, coconut milk, and water, and stir well.
- Add the red chili pepper (if using).
- Bring the mixture to a boil, then reduce heat to low and let it simmer for about 30 minutes, stirring occasionally.
- Add salt and pepper to taste.
- Serve hot with steamed rice.
