Paksiw na Isda

Paksiw na Isda is a traditional Filipino dish that is made by simmering fish in a vinegar-based broth. The word "paksiw" in Tagalog means to cook in vinegar. Here's a recipe for Paksiw na Isda that serves 4-6 people:

Ingredients:

  • 1 kg fish (such as bangus, tilapia, or mackerel), cleaned and cut into serving pieces
  • 1 cup vinegar
  • 1 cup water
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 pieces long green chili (optional)

Instructions:

  1. Heat oil in a pot or wok over medium heat. Add onion, garlic, and ginger and sauté for 1-2 minutes or until softened.
  2. Add the vinegar, water, brown sugar, soy sauce, salt, and black pepper. Stir to combine.
  3. Bring the mixture to a boil, then lower the heat to medium and let it simmer for 5 minutes.
  4. Add the fish pieces to the pot and let it cook for 5 minutes on each side or until the fish is fully cooked.
  5. Add the long green chili (if using) and let it simmer for another minute.
  6. Transfer the Paksiw na Isda to a serving dish and serve hot with steamed rice.
