Pork Afritada is a popular Filipino dish made with tender pork simmered in a tomato-based sauce with vegetables. Here's a recipe for Pork Afritada that serves 4-6 people:
Ingredients:
- 1 kg pork shoulder or belly, cut into bite-size pieces
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups chicken or pork broth
- 1 cup tomato sauce
- 1 potato, peeled and cubed
- 1 carrot, peeled and cubed
- 1 bell pepper, sliced
- 1 cup frozen green peas
- Salt and pepper to taste
Instructions:
- Heat oil in a large pot or Dutch oven over medium-high heat. Add the pork and cook until browned on all sides, about 5-7 minutes. Remove from the pot and set aside.
- In the same pot, sauté onion and garlic until softened, about 2-3 minutes.
- Add tomato paste and stir for a minute or until fragrant.
- Add broth and tomato sauce. Bring to a boil, then reduce heat to low and let it simmer for 15 minutes.
- Add the potatoes and carrots and cook for 10 minutes or until almost tender.
- Add the pork back into the pot and simmer for another 10 minutes or until the pork is fully cooked.
- Add the bell pepper and green peas and cook for another 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
