Pork Afritada

Pork Afritada is a popular Filipino dish made with tender pork simmered in a tomato-based sauce with vegetables. Here's a recipe for Pork Afritada that serves 4-6 people:

Ingredients:

  • 1 kg pork shoulder or belly, cut into bite-size pieces
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups chicken or pork broth
  • 1 cup tomato sauce
  • 1 potato, peeled and cubed
  • 1 carrot, peeled and cubed
  • 1 bell pepper, sliced
  • 1 cup frozen green peas
  • Salt and pepper to taste


Instructions:

  1. Heat oil in a large pot or Dutch oven over medium-high heat. Add the pork and cook until browned on all sides, about 5-7 minutes. Remove from the pot and set aside.
  2. In the same pot, sauté onion and garlic until softened, about 2-3 minutes.
  3. Add tomato paste and stir for a minute or until fragrant.
  4. Add broth and tomato sauce. Bring to a boil, then reduce heat to low and let it simmer for 15 minutes.
  5. Add the potatoes and carrots and cook for 10 minutes or until almost tender.
  6. Add the pork back into the pot and simmer for another 10 minutes or until the pork is fully cooked.
  7. Add the bell pepper and green peas and cook for another 2-3 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot with steamed rice.
