Tinolang Manok

Tinolang Manok is a classic Filipino chicken soup dish that is made with tender chicken pieces, green papaya, and malunggay leaves (also known as moringa). Here's a recipe for Tinolang Manok that serves 4-6 people:

Ingredients:

  • 1 kg chicken, cut into serving pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 tbsp vegetable oil
  • 8 cups water
  • 2 cups cubed green papaya
  • 1 cup malunggay leaves
  • 2 tbsp fish sauce
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a pot or Dutch oven over medium-high heat. Add onion, garlic, and ginger and sauté for 1-2 minutes or until fragrant.
  2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
  3. Add water and bring to a boil, then lower heat to medium and let it simmer for 30 minutes or until the chicken is cooked through.
  4. Add the green papaya and cook for 5-7 minutes or until almost tender.
  5. Add the malunggay leaves and cook for another minute.
  6. Season with fish sauce, salt, and pepper to taste.
  7. Serve hot with steamed rice.
