Ingredients:
- 1 kg chicken, cut into serving pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 tbsp vegetable oil
- 8 cups water
- 2 cups cubed green papaya
- 1 cup malunggay leaves
- 2 tbsp fish sauce
- Salt and pepper to taste
Instructions:
- Heat oil in a pot or Dutch oven over medium-high heat. Add onion, garlic, and ginger and sauté for 1-2 minutes or until fragrant.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Add water and bring to a boil, then lower heat to medium and let it simmer for 30 minutes or until the chicken is cooked through.
- Add the green papaya and cook for 5-7 minutes or until almost tender.
- Add the malunggay leaves and cook for another minute.
- Season with fish sauce, salt, and pepper to taste.
- Serve hot with steamed rice.
