Adobong Kangkong

Adobong Kangkong is a delicious and easy-to-make Filipino vegetable dish made with kangkong (water spinach) leaves cooked in a savory and tangy soy sauce and vinegar-based sauce. Here's a recipe for Adobong Kangkong that serves 4-6 people:

Ingredients:

  • 1 bundle kangkong leaves (about 2 cups), washed and trimmed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/2 cup water
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a pan or wok over medium-high heat. Add onion, garlic, and ginger and sauté for 1-2 minutes or until fragrant.
  2. Add the kangkong leaves and stir-fry for 1-2 minutes or until wilted.
  3. In a separate bowl, mix together soy sauce, vinegar, water, and brown sugar until well combined.
  4. Pour the soy sauce and vinegar mixture over the kangkong leaves. Mix well to coat the leaves with the sauce.
  5. Bring the mixture to a boil, then lower the heat to medium and let it simmer for 3-5 minutes or until the sauce has thickened and the kangkong leaves are fully cooked.
  6. Season with salt and pepper to taste.
  7. Serve hot with steamed rice.
